Ingredients:

  • 12 large eggs

  • 1 teaspoon salt
  • 2 garlic cloves, smashed (optional, for added flavor)
  • 1 teaspoon black peppercorns

  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 2-3 bay leaves
  • 1 small onion, thinly sliced (optional)
  • 1-2 fresh dill sprigs (optional, for extra flavor)

Instructions:

1. Boil the eggs:

  • Place the eggs in a large pot and cover them with water.
  • Bring the water to a boil over medium-high heat. Once boiling, reduce the heat and let the eggs simmer for about 9-10 minutes for hard-boiled eggs.
  • Once the eggs are done, remove them from the pot and place them in a bowl of ice water to cool for at least 5 minutes.
  • Peel the eggs carefully once they are cool enough to handle.

2. Prepare the pickling brine:

  • In a medium saucepan, combine the vinegar, water, sugar (if using), and salt. Add the garlic cloves, peppercorns, mustard seeds, red pepper flakes (if using), bay leaves, and sliced onion (if using).
  • Bring the mixture to a simmer over medium heat, stirring occasionally to dissolve the sugar and salt.

3. Jar the eggs:

  • Place the peeled hard-boiled eggs in a clean, sterilized glass jar (or jars if making a smaller batch).
  • Add fresh dill sprigs (if using) to the jar for extra flavor.

4. Pour the brine over the eggs:

  • Once the brine has cooled slightly, pour it over the eggs, making sure they are fully submerged in the liquid. If necessary, you can use a clean weight or a piece of parchment paper to hold the eggs down and keep them submerged.

5. Seal and refrigerate:
