Here’s a recipe for Cod Piccata:

Ingredients:

  • 4 cod fillets (6-8 ounces each)
  • Salt and freshly ground black pepper (to taste)
  • 1/2 cup all-purpose flour (for dredging)
  • 3 tablespoons olive oil (for frying)
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup white wine (or chicken broth)
  • 2 tablespoons capers (drained)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions:

  1. Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.

  2. Dredge the Cod: Lightly dredge the cod fillets in flour, shaking off any excess.

  3. Cook the Cod: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the cod fillets and cook for about 3-4 minutes per side, or until the fish is golden brown and cooked through (the internal temperature should reach 145°F). Remove the fillets from the skillet and set them aside.

  4. Make the Piccata Sauce: In the same skillet, add 1 tablespoon of olive oil and the butter. Stir until the butter is melted. Add the white wine (or chicken broth), lemon juice, and capers.   5. Finish the Dish: Return the cod fillets to the skillet and spoon the sauce over the top. Let the fish simmer in the sauce for another 2-3 minutes to absorb the flavors and heat through.
